Ideas For A Deli Menu

A friend of mine is buying a run down liquor store deli and is going to renovate and make it new. Besides all the usual cold cuts and sloppy joes and soup can anyone suggest something different that is profitable and tastes good or any ideas at all. Thank You

That bag of dried seaweed from the Asian market

...that I bought last week. I finally opened it today. Tasted a piece of the dried kelp, and it has a pleasant kind of salty and iodine taste. Not /nearly/ as salty as seawater, but otherwise reminiscent of it. I soaked a big handful in cool water for about 20 minutes, then drained it (reserving the water) and set aside.... more »

Paul's post on chicken thighs made me think of this. We got 20# of chicken thighs a while back. Cut the skin and fat off them, and vacuum sealed them three to a bag with marinade. I weighed everything, and found out that overall on 20#, 30% is fat and skin. You might use that info when shopping and comparing skinless to with skin.... more »

How do you do ribs ??

I usually sprinkle on a rub, then charcoal grill. No BBQ sauce unless requested. Is it better to grill first, then - just maybe - bake afterwards with BBQ sauce, or bake first perhaps in a low & slow oven, then grill with the BBQ sauce, if desired ?? There are too many ways to do ribs it's hard to count <G>.... more »

They were on sale, 10 pounds for 7 bucks. OK, so what would be a quick and easy, yet pleasing dish to prepare? I was going to deep fry them but I don't want all the mess. Something in the oven would be cool. Paul
